*** Spanish Cooking. A gourmand and a satisfied customer: My name is Jose...your cider is simply fantastic for cooking, particularly for some Spanish recipes involving broadbeans, chorizo and other meats. The dish consists of broad beans cooked with olive oil, white wine, garlic, peppercorns (optional) and chorizo in slices and accompanied by, usually, pork fillet "solomillo". When we visited Sydney we tried for the first time chorizo cooked in sidra and it was good! So my wife decided to try this dish with Thorogoods cider instead of the white wine and it was fabulous so we abandoned the white wine, it was too inconsistant. I have also tried the dish with beef, olive oil, garlic, bit of soy sauce, bit of wholegrain mustard and your cider, Also I have tried chicken and mixed vegtables, peas capsicum, beans, finely choped onions, tomato and garlic (garlic is practically compulsary in our cooking) with fantastic results. A tip: use frozen broad beans to save time so that you don't have to soak the dry stuff for 24 to 48 hours. Bon Apitite.
